[Eggs] Filled Omelette

Ingredients: 12 eggs
60ml cold water
6 drops hot sauce (adjust as necessary)
Salt
4 tbsp unsalted butter

  • Break eggs in large bowl and mix with water.
  • Add hot sauce and pinch of salt
  • In non-stick or well seasoned omelette pan, melt 1 tbsp butter over medium heat.
  • When foam subsides add egg mixture.
  • Swill 30 60 seconds or until cooked.
  • Remove from heat and quickly spoon in choice of filling down one side.
  • Fold over and serve.
  • Repeat with remaining mixture.
