Simple: Light weight materials are more efficient, and are usually useful for far more than just racing to the checker. Lighter machines are "greener" machines.
While it is true that many exotic materials are constructed using methods that are possibly excessive or wasteful, it is usually the case that as more of a given material is produced, the production of that material becomes more efficient and less wasteful.
