VT-R should be qualifying in the top 10 on the grid
For that size I'd guess 9" would be optimum with 8" being minimum recommended. On a 7" id think it would be starting to look a little trapezoidal, but how it would perform would all depend on the side wall construction, generally the lower the profile ratio the worse it'll be effected.

From my limited experience if it did fit ok I'd just expect the break away point to be a little less predictable and a little more woolly than on the correct rim.
