That Motorsport-Total article mentioned above said that they can't really do it "in house in house", due to labor laws and what not as all the rules that apply to the last mechanic and bean counter of Porsche AG would also apply to the race team, e.g. for working overtimes, holidays, etc and that would be a huge burocratic pain in the neck.
What I could see them doing is using Manthey (or someone else) as a shell for what it effectively an in house operation.
