[Eggs] Poached Eggs with Red Wine Sauce

Ingredients: 6 tbsp butter
114g plus 2 tbsp chopped bacon
75g chopped onion
1 clove garlic, minced
2 whole cloves garlic
470ml red wine
tsp sugar
117ml chicken stock
Bouquet garni
2 tbsp flour
4 English muffins
8 eggs
2 tbsp vinegar
  • Heat 4 tbsp butter in skillet and saute cup bacon, onion and minced garlic until onion is soft
  • In separate skillet, cook remaining bacon until crisp. Set aside
  • Add whole cloves, wine, sugar and salt and pepper to taste to bacon-onion skillet.
  • Add bouquet garni and stock.
  • Cover and simmer 20 minutes.
  • Mix 2 tbsp butter and flour to make thick paste.
  • Strain sauce and return to skillet, thickening with flour paste.
  • Stir until sauce is smooth.
  • Toast muffins and poach eggs with vinegar.
  • Place eggs on muffins, spoon sauce over and garnish with bacon bits.
