[Cheese] Skillet Biscuits

Ingredients: 457g plain flour
4 tbsp grated parmesan cheese
1 tbsp baking powder
tsp baking soda
tsp salt
4 tbsp Neufchatel cheese (use normal Cream cheese if not available)
2 tbsp butter
171g Yoghurt
75g slivered basil leaves
  • Combine flour, 2 tbsp Parmesan cheese, baking powder, n\baking soda and salt in large bowl.
  • Cut in Neufchatel and 1 tbsp butter until the mixture forms coarse crumbs.
  • Stir in yoghurt and basil. Knead on floured surface until dough just holds together.
  • Roll into log and cut into 1 inch slices.
  • Spray cast iron skillet with cooking spray.
  • Place biscuits in single layer and brush with remaining butter and sprinkle with remaining cheese.
  • Cook over medium grill 20 40 minutes until biscuits are golden and firm on top.
