Corned Beef Hash with Sour Cream and Mustard Sauce

Ingredients: 686g corned beef
3 med potatoes
2 tbsp unsalted butter
large onion, diced
12 mushrooms, diced
oil
salt and pepper
114g coarse chopped celery leaves
235ml sour cream
2 tbsp Dijon mustard
2 tbsp lemon juice
  • Cut potatoes in cubes. cover with water and bring to a boil.
  • Lower heat and simmer 5 minutes. Drain and pat dry.
  • Heat butter and oil in large skillet and saute onions and mushrooms.
  • Add potatoes and season with salt and pepper.
  • Cook 5 minutes stirring occasionally.
  • Add chopped corned beef and celery leaves.
  • Continue cooking, scraping bottom to remove bottom crust.
  • Cook until potatoes are tender.
  • In small bowl, mix sour cream, mustard and lemon juice.
  • Serve out hash with sauce on the side.
