[Eggs] Guatamalan Eggs

Ingredients: Eggs
229g green beans
salt, pepper
3 tbsp oil
57g thin sliced onions
114g thin sliced scallions
114g seeded, chopped tomatoes
8 eggs

Hot Sauce
2 tsp chopped garlic
2 3 tsp red pepper flakes
1 cup seeded, chopped tomatoes
tsp salt
2 tbsp oil
cup finely chopped onion
  • Wash beans, trim and blanch 2 minutes in hot water.
  • Chill and cut in in pieces.
  • Heat oil in skillet
  • Add onions and scallions and saute 2 minutes.
  • Add tomatoes, beans, 1 tsp salt and pepper to taste.
  • Stir fry 3 minutes or until beans are crisp-tender.
  • Remove from heat.
  • Whisk eggs and add to bean mixture in skillet.
  • Return to medium heat and cook 3 4 minutes, stirring occasionally until eggs are firm.
  • Divide mixture on plates and serve with Hot Sauce on the side.

Hot Sauce
  • Combine garlic, tomatoes, salt and pepper flakes with 1 cup water in small saucepan.
  • Cover and cook over medium heat 10 minutes.
  • Heat oil in skillet and saute onions 2 minutes.
  • Remove from heat.
  • Puree tomato mixture and add to onion in skillet.
  • Return skillet to heat and simmer over low heat 10 minutes.
  • Serve as a side condiment
