[Beef] Pepper Steak with Fire Roasted Pepper Salsa

Ingredients: 4 . Strip loin steaks
(340g per steak approx)

700ml Mexican beer
2 chipoltle peppers
8 cloves garlic, minced
2 tbsp fresh ground black pepper
1 tbsp cilantro chopped
2 tbsp olive oil
1 lime, juiced
150g Monterey Jack cheese, grated
  • Cover the steaks with beer and marinate overnight.
  • Remove steaks, pat dry and reserve beer for basting.
  • Combine spices, oil and lime juice and season well with sea salt.
  • Rub into steaks
  • Preheat grill to high and brush grill with oil.
  • Grill steaks basting occasionally until almost cooked.
  • Top with salsa and cheese.
  • Close grill and cook until cheese is melted.
