[Veg] Pumpkin with Coriander and Saffron Butter

Ingredients: |
Small pinch of saffron
60g butter, softened
1 tbsp finely chopped coriander
½ pumpkin, seeded and sliced in wedges
olive oil
3 tbsp coriander leaves

- Soak saffron in 2 tbsp hot water for 20 minutes.
- Add butter and coriander and mix well.
- Roll into small log and refrigerate.
- Brush pumpkin wedges with oil and season with salt and pepper.
- Grill 10 minutes per side or until browned and tender.
- Remove and top with pat of butter.
- When butter melts, sprinkle with coriander leaves.
