[Veg] Pumpkin with Coriander and Saffron Butter

Ingredients: Small pinch of saffron
60g butter, softened
1 tbsp finely chopped coriander
pumpkin, seeded and sliced in wedges
olive oil
3 tbsp coriander leaves
  • Soak saffron in 2 tbsp hot water for 20 minutes.
  • Add butter and coriander and mix well.
  • Roll into small log and refrigerate.
  • Brush pumpkin wedges with oil and season with salt and pepper.
  • Grill 10 minutes per side or until browned and tender.
  • Remove and top with pat of butter.
  • When butter melts, sprinkle with coriander leaves.
Serves: 4
