[Veg] Fire Roasted 4 Pepper Salsa

Ingredients: |
1 each red, yellow, orange
and poblano peppers,
halved and seeded
1 large red onion, sliced
olive oil
1 lime, juiced
1 tbsp coriander, chopped
1 chipotle chili, minced
salt, pepper

- Rub peppers and onion with oil and season to taste
- Preheat grill and grill until peppers are charred and blistered and onion is tender.
- Remove from grill, cool and coarsely chop.
- Add 2 tbsp oil, lime juice, coriander and chipotle.
- Mix well.
- Season to taste and set aside.
