[Eggs] Filled Omelette

Ingredients: |
12 eggs
60ml cold water
6 drops hot sauce (adjust as necessary)
Salt
4 tbsp unsalted butter

- Break eggs in large bowl and mix with water.
- Add hot sauce and pinch of salt
- In non-stick or well seasoned omelette pan, melt 1 tbsp butter over medium heat.
- When foam subsides add ¼ egg mixture.
- Swill 30 – 60 seconds or until cooked.
- Remove from heat and quickly spoon in choice of filling down one side.
- Fold over and serve.
- Repeat with remaining mixture.
