[Veg] Grilled Ratatouille

Ingredients: 2 medium/large Aubergines (eggplant)
2 red sweet peppers
900g Courgettes (zucchini)
1 large onion
100ml Italian dressing
800g whole tinned tomatoes
3 tbsp tomato paste
60g fresh chopped basil or
1 tbsp dried basil
salt and pepper

  • Preheat grill to medium-high
  • Peel aubefgine and slice in inch slices.
  • Cut peppers into 4 slices
  • Cut courgettes into inch slices
  • Peel onion cut inch slices.
  • Grill veggies until lightly browned on both sides, aubergine about 4 minutes, courgette, peppers and onion about 6 minutes.
  • Remove from heat as they brown and chop into 1 inch pieces.
  • Transfer to large pot, add tomatoes and juice, paste and salt and pepper to taste.
  • Bring to a boil, reduce heat to low and simmer 30 minutes.
  • Serve with wild rice salad.
