The problem with S2000s are the short intervalls between engine rebuilts... IIRC only 1500km for the BMW E90, so that would last about 2 weekends in a series of 500 kilometer races.
That said, they could easily put less stressed engines in those cars, like that one Belgian team did with their E90 that is powered by a 3.2l I-6.
