Theres plenty of Golf engine swaps around, most VR6-powered I think.

Very few track cars end up VR6 powered - too heavy and not enough go.

Most seem to go for a 2.0 8v or 2.0 16v.
Other options are 1.8 G60 (supercharged), 1.8 20v Turbo (big, big power here)
