I never say it in my country but I find easily good meals in England- may be easier than in France - even if sometimes the very good meat is not cooked the same way as its done here. Not very rare … |

Gerard, I think you have to ask for blue when ordering beef/lamb/duck or venison in the UK. I'm a "blue" beef but medium to rare for the others, all a matter of taste of course. And it does depend on the joint which, as you say, can sometimes be butchered differently.
As to eating sur le continent. I've found it difficult to complain about any food I've eaten in Europe. France introduced me to Maigret du Canard and Pommes Sarladaise. Not to mention Rilletes D' Oi. |

Recent talk of Alpine cars made me turn to the feature in Octane this month about the sweet little M74 Le Mans proto. One of those stories that appeals to me- Chapman upset about the Lotus 23 being barred from the race, Jean Redele (Alpine) wanting to beat Rene Bonnet in the index of thermal efficiency category, and Chapman believing the latter was responsible for his carâs ban...... I had no idea that Lotus designed a 23 style frame for Alpine, which was modified and used for the M74. Then in 1964 it won the Index and beat the Bonnet entry. Average for 24hrs, 21mpg and 101mph- wow!
Apparently the car should be at LMC in 2018. Another reason to try and get there..... |

Now you see? Baked Beans is supposedly an American invention but I can tell you that Fisullli, which is Turkish, was probably the original incarnation. I learned to cook them myself and if you can stand not being allowed into confined spaces for a day they are excellent!
Gerard, one of my favourite meals is Assiette des Ardennes. Always on the menu when visiting Spa. I've learned to confit my own ducks and can make a passable cassoulet du confit du canard. I shall be roasting aa couplr of beef ribs accompanied by roast potatoes, Yorkshire pudding and suitable green veg on Boxing day. Having travelled the world, more or less, I'm lucky to have been able to sample most cuisines in their home location. And it is fair to say that good food in any country is always a pleasure. |

Indeed it was but there's always been similar in places like the middle East etc. Likewise ravioli is an Italian invention but you will find Khingali in Georgia, Manti in Turkey and Pelmeni in Russia. All very similar.

Peter, you're a true Chef! If you look at the spĂ©cialitĂ©s many regions of France can offer, its worth a gastronomique travel. Well, not of them of course…*Can the wonderful island of Corsica can be included in the compliment, I dunno. By the way, what is exactly Yorkshire pudding? I shouldn't ask because we have two nice Yorkies at home!
Mike, the story about Chapman and Le Mans makes me uncomfortable to say the least. Our local competitors' attitude supported by the organiser has been unfair. The obstinacy of some to use the Panhard flat twin, pathetic and asthmatic under its 750 cc form, can't explain this attitude. At least Rédélé used a 4 cylindre engine which, combined with numerous cars, good and reliable drivers and a very good aerodynamic gave the results he got. Honestly what could a Panhard engine do against a Climax? The best flat twin mods I ever saw was 2 Manx heads on it. But it was almost impossible to keep the crank inside its case! |

Donât worry, the pudding is terrier friendly! Basically same raw materials you would use for crepes or clafoutis but not sweetened, and the mixture is then cooked in a very hot oven.....

Are Yorkies popular in England too? I hope mine could meet terence's shepherd one day, may be in Belgium? Your recipe sounds good, Mike will ask my personal cook to try it! It fascinates me to how some meals said to feed less favored people became famous world wide like couscous,pizza,pancakes, bouillabaisse and many others. With a lot of changes sometimes though. On another subject. I've discovered that the NORAD Santa Tracker was started by mistake. Apparently Sears posted an advert in 1955 telling kids to call a certain phone number. It was mistakenly the number for the predecessor to NORAD. The bloke in charge decided to play along and since then it's been tracking Santa. Nowadays it's a computer generated app. Tell the kids of today that and they'd never believe you.

Yes terence, definitely a good idea. As to Malmedy, I wonder how many we are having experienced the old track and still driving, apart from Belgian drivers? Probably not so many.
