I am aware that there are two whole days of extra testing provided for all teams prior to the regular 3 practice sessions, but is that enough for something this team team has never experienced before? As in, not Formula 1 level of track conditions?

If not, they can simulate the surface at TMG. And they have a lot of experience with the Nurburgring, even if it isn't with the lmp1, so I think they know a little bit about bumpy tracks.
